There are a lot of CRUD apps, but there are other kinds of apps too. You can somewhat affect what you end up doing by trying to choose a company that looks good on paper.
CRUD apps are not all that bad though. A lot of business integration projects need deep understanding of the business, and building software that deals with it in a reliable and most of all maintainable and easy to extend way is a challenge. It may not be a similar braintease as algorithms or whatever, but they can be quite interesting if you enjoy the architectural side of programming. There’s the whole topic of Domain-Driven Design for example.
